Thankfulness

Time to be Thankful

My God - endless love.
My Husband - the man who challenges me, loves me, humors me, provides for me. A wonderful father, friend and husband.
My Daughter - adorable, precious, our Gift from God
My Mother - role model, compassionate, beautiful from the inside out
My Father - provider, hardest working man I know, helper
Amanda - sister, friend, confidant
Andy - brother, hard working, dependable, nerdy, dedicated
Erin - sister-in-law, friend, humorous, loyal
In-Laws - great role models, loving, compassionate
Friends - confidants, accountability partners, encouraging, listeners
Grandparents - thoughtful, selfless, encouraging,
Aunts & Uncles - dependable, encouraging, caring
Extended Family - beyond blessed with many loving, devoted, selfless relatives.

I am blessed beyond my worth. My life is rich and full with the things that matter most. I have the most amazing husband, a beautiful, healthy daughter and family that would go to the end of the earth if I needed them too. My life is overflowing with blessings!

Shake, Rattle and Blow

Storm Recap

So this morning, when Michael left for work, he warned me it might be a little rainy and blah.....Initially, this made me happy. I love spending rainy days listening to the light rain fall and the rustling of leaves. Days like that make me want to cuddle and drink coffee all day! However, out of no where came the crazy tornado like weather. This left me scrambling to grab cloths for Bailey, picture albums, pillows, blankets and a few other necessities to stash in the closet. I had to be prepared for our (in my mind) definite trip to OZ. I just knew we were going to blow away!! I hate storms....... I AM TERRIFIED OF TORNADOES. An hour and a half after the storm, I have just stopped feeling nauseous and am no longer visibly shaking!

Anyone have any calming coping skills they utilize while preparing for OZ?? I am definitely up for suggestions.

Oatmeal Pumpkin Pie Muffins

To me, fall means football, scarves, long walks, bonfires, apple cider, crocheting, cuddling on the couch, and finding new tasty recipes!! After taking a leisurely walk to the library, I decided to tackle a newly modified recipe. YUMMY!!

Oatmeal Pumpkin Pie Muffins

2 cups pumpkin pie mix
1 cup packed brown sugar
1/2 cup butter
1/2 cup water
4 eggs
2 cups whole wheat flour
1 cup oatmeal
4 teaspoons baking powder
2-3 teaspoons pumpkin pie spice
1/4 teaspoon nutmeg
1 teaspoon salt
1/2 cup cinnamon chips leftover from a previous recipe.

*Heat oven to 375*F.
*Grease and flour muffin tins, or use paper liners.
*Mix together all ingredients except cinnamon chips, blend until just combined.
*Stir in chips.
*Fill muffin tins three fourths full.
*Bake for 20 minutes, or until muffins test done.
*Cool in pan or on a wire rack.
